- 1 extra-large egg
- Vinegar
- 1 slice thick wholegrain bread
- 30g sliced smoked salmon
- 1 tbsp avocado
- 1 lemon wedge
- Pepper (to taste)
Method
Step 1:
Boil water in a small saucepan or frying pan.
Step 2:
Turn the heat down to a simmer, add a splash of vinegar and carefully crack an egg into the water. Cook to your liking.
Step 3:
Meanwhile, toast the bread until golden brown or to your liking.
Step 4:
Spread the avocado onto the toast, squeeze the lemon over the top of the avocado for a drizzle of juice, and place the salmon on top.
Step 5:
Place the egg on the smoked salmon and season with pepper to serve.
