A plate is filled with poached eggs on toast with avocado and smoked salmon.

Nothing says ‘Aussie breakfast classic’ like smoked salmon, fresh avocado and eggs on toast.

Whether you’re looking to kick-start your day with omega-3 fatty acids and plenty of protein, or just want to enjoy a delicious morning bite in your PJs, this simple and familiar family favourite will help you stay fuller for longer.

  • 1 extra-large egg
  • Vinegar
  • 1 slice thick wholegrain bread
  • 30g sliced smoked salmon
  • 1 tbsp avocado
  • 1 lemon wedge
  • Pepper (to taste)

Method

Step 1:

Boil water in a small saucepan or frying pan.

Step 2:

Turn the heat down to a simmer, add a splash of vinegar and carefully crack an egg into the water. Cook to your liking.

Step 3:

Meanwhile, toast the bread until golden brown or to your liking.

Step 4:

Spread the avocado onto the toast, squeeze the lemon over the top of the avocado for a drizzle of juice, and place the salmon on top.

Step 5:

Place the egg on the smoked salmon and season with pepper to serve.
