A plate is filled with ricotta and avocado smash with smoked salmon in rye bread rolls.

Breakfast is the most important meal of the day, especially when you’ve got some smoked salmon and a fresh loaf of rye bread to munch on.

Whether you’re starting your day with a lazy breakfast in bed or sitting outside enjoying the sunshine with your coffee, nothing beats our ricotta and avocado smash with smoked salmon on rye.

  • 1/2 ripe avocado
  • 100g ricotta cheese
  • Zest of one lemon, plus cheek for squeezing on top
  • 2 large slices of rye bread
  • 4 slices smoked salmon (about 60g)
  • A few finely sliced rounds of Spanish onion
  • 2 tsp baby capers
  • Cracked pepper and sea salt
  • Mesclun lettuce or alfalfa sprouts for serving (optional)

Method

Step 1:

Remove avocado from skin. Place avocado, ricotta and lemon zest into a bowl, and smoosh together with a fork. Season well with a good crack of pepper and some sea salt.

Step 2:

Lightly toast your rye bread.

Step 3:

Top each piece of toast with half of the avocado mixture and place 2 slices of salmon on each.

Step 4:

Sprinkle with capers and sliced Spanish onion. Squeeze a little lemon on each, and add a final crack of pepper. Serve with lettuce or alfalfa sprouts if desired.
