Breakfast is the most important meal of the day, especially when you’ve got some smoked salmon and a fresh loaf of rye bread to munch on.

- 1/2 ripe avocado
- 100g ricotta cheese
- Zest of one lemon, plus cheek for squeezing on top
- 2 large slices of rye bread
- 4 slices smoked salmon (about 60g)
- A few finely sliced rounds of Spanish onion
- 2 tsp baby capers
- Cracked pepper and sea salt
- Mesclun lettuce or alfalfa sprouts for serving (optional)
Method
Step 1:
Remove avocado from skin. Place avocado, ricotta and lemon zest into a bowl, and smoosh together with a fork. Season well with a good crack of pepper and some sea salt.
Step 2:
Lightly toast your rye bread.
Step 3:
Top each piece of toast with half of the avocado mixture and place 2 slices of salmon on each.
Step 4:
Sprinkle with capers and sliced Spanish onion. Squeeze a little lemon on each, and add a final crack of pepper. Serve with lettuce or alfalfa sprouts if desired.
