There’s nothing like coming home on a hot summer day to some refreshing homemade icy poles.

We’ve put together a healthier alternative to store-bought options that’s quick to make and packed with flavour. It’s a great way to get kids into the kitchen, and an even better way to cool them down after a busy day of running around in the sunshine.

  • 1/2 large watermelon, skin removed
  • 1 cup coconut water
  • 1 tbsp mint leaves

Method

Step 1:

Cut the watermelon flesh into chunks.

Step 2:

Add all of the ingredients to a blender and puree until smooth.

Step 3:

Pour into icy pole moulds and freeze for a minimum of 2 hours, but preferably overnight.
