What’s better than fresh bickies after a big day at school or work? A recipe that only uses 2 ingredients and takes about 5 minutes in the kitchen.
Step 1:
Pre-heat oven to 150°C.
Step 2:
Halve your fruit, remove the seeds, then place with the cut side facing up in a ceramic baking dish.
Step 3:
Whisk together the juice, maple syrup and vanilla with a fork, then pour over the fruit.
Step 4:
Sprinkle with mixed spice, then bake for 20 minutes.
Step 5:
Flip the fruit over and bake for a further 15 to 20 minutes, until soft but still holding its shape.
Step 6:
Place fruit into 6 bowls and serve with 100g of coconut yoghurt each. Add the juices from the tray used to bake the fruit, then top with 30g of your favourite granola. Alternatively, the fruit can be stored for 2 to 3 days in the fridge.
