Kick-start your day with our healthier homemade muesli, your favourite fresh fruits and a dollop of natural yoghurt.

This muesli recipe makes a delicious base for a healthy and nutritious breakfast, perfect for your weekly meal-prep or brekky on-the-go. Rolled oats are a great source of soluble fibre, which can help with lowering cholesterol, weight management and keeping your bowels healthy.

  • 200ml hot water
  • 1/4 cup honey
  • 1 cup rolled oats
  • 1/4 cup flaked almonds
  • 1/4 cup sesame seeds
  • 1/4 cup pepitas
  • 1/4 cup sunflower seeds
  • 1/2 cup flaked coconut
  • 1/4 cup sultanas
  • 1/4 cup dried apricots, chopped

Method

Step 1:

Pre-heat oven to 160°C.

Step 2:

Mix honey into hot water until it goes runny.

Step 3:

In a large bowl, mix oats, nuts and seeds.

Step 4:

Pour the watered-down honey over the oats mixture and stir until all the ingredients are covered with honey.

Step 5:

Line a tray with baking paper and spread mixture out on the tray.

Step 6:

Cook muesli in the oven for 10 minutes, remove and stir mixture, then cook for a further 10 minutes.

Step 7:

Remove from the oven and add coconut and dried fruit.

Step 8:

To store, place muesli in an airtight container in the pantry.

Step 9:

To serve, place 1/4 cup muesli mixed with 1/2 cup natural yoghurt in a cereal bowl. Add fresh fruit to taste and enjoy!

If you prefer untoasted muesli, simply mix all the dry ingredients together in a large bowl and store.
