Put a little spring in your step with our coconut and date dream balls.

This recipe is a great way to take your preferred protein powder, but if you’re just looking for a yummy, healthy snack, you can replace the powder with desiccated coconut. These dream balls are packed with the natural sweetness of Medjool dates and honey, and balanced out by the tart flavours of goji berries and cranberries.

  • 4 tbsp organic virgin coconut oil
  • 2 tbsp honey
  • 2 cups pitted Medjool dates
  • 1 cup roasted almonds
  • 1 cup fresh walnuts
  • 1 scoop protein powder, or about 2 tbsp desiccated shredded coconut
  • 1/2 cup toasted pepitas
  • 1/2 cup sunflower seeds
  • 1 1/2 cups desiccated coconut flakes
  • 2 tbsp chia seeds
  • 2 tbsp goji berries
  • 2 tbsp craisins

Method

Step 1:

Melt coconut oil and honey in a small saucepan, then set aside.

Step 2:

Add remaining ingredients to a food processor, making sure to leave 1 cup of coconut flakes aside to coat the balls.

Step 3:

Pulse until rough and combined, adding a few tablespoons of water if needed. You should achieve a sticky, gluey consistency.

Step 4:

Using wet hands, roll into 50-cent-sized balls and place onto a tray lined with baking paper.

Step 5:

Once you’ve rolled all of the balls, sprinkle over your coconut flakes. Gently roll to cover them all, reshaping balls as needed.

Step 6:

Place in the refrigerator for an hour to set, then store in an airtight container.
