- 1 cup pitted dates
- 1/4 cup raw almonds
- 1/4 cup raw cashews
- 2 tbsp pepita seeds
- 2 tbsp sunflower seeds
- 1 tbsp chia seeds
- 3 tbsp cacao powder
- 15 drops food-grade peppermint oil
- 1 tbsp coconut oil or olive oil
- Ground pistachios, desiccated coconut and cacao powder for decorating
Method
Step 1:
Place all the ingredients (except for those for decorating) into a food processor and turn on high for about 10 minutes. You want to process the mix until it turns into a sticky, dough-like texture. If you stop too soon, it will be crumbly and fall apart.
Step 2:
Roll tablespoon-sized balls between your palms. There may be a little excess oil from the nuts and coconut oil.
Step 3:
Roll the balls into your ground nuts, cacao or coconut to decorate, and refrigerate until ready to serve.
