- 2 tbsp olive oil
- 4 cloves garlic, crushed
- 2 large onions, chopped
- 3 tbsp sweet paprika
- 3 tbsp ground cumin
- 800g (2 cans) tinned chopped tomatoes
- 3 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 800g (2 cans) tinned black beans, rinsed and drained
- Rice or tortillas, to serve
- Chopped spring onions, chopped tomato and avocado chunks to serve
Method
Step 1:
Heat the oil in a large pan and fry the garlic and onions for 5 minutes until almost softened.
Step 2:
Add the paprika and cumin and cook for a few minutes. Add the vinegar, tomatoes, sugar and some pepper. Cook for about 10 minutes.
Step 3:
Add the beans, stir gently and cook for another 10 minutes.
Step 4:
Serve with your choice of rice or tortillas, and chopped spring onions, tomatoes and avocado.
