Packed with banana and topped with berries and peanut butter, this healthier breakfast option will give you the energy you need to start your day the right way.

  • 1 cup wholemeal self-raising flour
  • 1 cup milk (or a plant-based alternative)
  • 1 egg, beaten
  • 1 medium-ripe banana, mashed
  • Cinnamon
  • 1 tbsp peanut butter, warmed in the microwave
  • Berries to serve
  • Sliced banana to serve

Method

Step 1:

Beat the egg and flour together until combined.

Step 2:

Gradually pour in the milk and add the mashed banana, then mix until smooth.

Step 3:

Cook the pancake mixture over medium heat. Once bubbles have appeared, sprinkle with a pinch of cinnamon, then flip. Cook until golden brown.

Step 4:

Serve with a drizzle of warm peanut butter, banana slices and berries, or substitute with your favourite toppings.
