This diabetes-friendly turkey roll will leave you gobbling for more.

It doesn’t have to be a holiday for you to make this festively wrapped rolled turkey breast. Low in saturated fat and high in flavour, this is a fantastic diabetes-friendly recipe that’s great for all occasions. If you want to make the dish even healthier, you can simply cook it without prosciutto. Just don’t skip on the stuffing! Served with a crunchy, creamy salad on the side.

Turkey
  • 800g turkey breast, cut into steaks
  • 2 pieces wholegrain bread
  • 1/2 celery stalk, diced
  • 1/2 Granny Smith apple, grated
  • 1/4 Spanish onion, diced
  • 2 tbsp pistachio
  • 1 tbsp unsweetened cranberries
  • Zest of one lemon
  • 8 thin slices prosciutto (optional)
  • 4 sprigs thyme, picked
  • 8 sprigs of thyme for garnish
Salad
  • 10 Brussels sprouts, outer leaves and stalks removed, sprouts halved
  • 1/2 red cabbage, shredded
  • 1/4 cup walnuts, roughly chopped
  • 1/4 cup parsley, chopped
  • 2 spring onions, chopped
Green goddess dressing
  • 2 tbsp natural yoghurt
  • 1/2 avocado
  • 1/2 lemon, juiced
  • 1/2 cup parsley, leaves only
  • 1 clove garlic
  • 3 tbsp apple cider vinegar
  • 1/4 cup water
  • 1/4 cup olive oil

Method

Step 1:

Pre-heat oven to 180°C.

Step 2:

Using a meat mallet or rolling pin, flatten each turkey steak until about 1.5cm thick.

Step 3:

In a food processor, blitz the bread into fine crumbs. Mix the breadcrumbs with the celery, apple, nuts, cranberry, onion, thyme and lemon zest, making a stuffing.

Step 4:

Add a large tablespoon of stuffing to the centre of each piece of turkey, then roll up tightly.

Step 5:

Wrap turkey with slices of prosciutto. If you need to secure them further, use toothpicks. Garnish each with a sprig of thyme then pop them into the oven for about 20 minutes, or until cooked through.

Step 6:

Blend all of the dressing ingredients together in a food processor until smooth. Season to taste. Then combine all of the salad ingredients in a large bowl, and toss through the dressing right before serving.
