- 4 ripe tomatoes, whole
- 1 white onion, skin on, quartered
- 4 garlic cloves, skin on
- 1 large red chilli, skin pierced
- 1 handful coriander stalks and leaves, chopped
- 2 limes, juiced
- 1 tbsp olive oil
- Cracked black pepper
Method
Step 1:
Pre-heat a BBQ or heavy-based pot on high.
Step 2:
Add garlic, quartered onion, chilli and tomatoes, and dry roast until nicely charred.
Step 3:
Remove skin from onion and garlic, and add to a food processor with the tomatoes, chilli, coriander stalks, lime juice, olive oil and pepper. Lightly pulse until the vegetables appear diced.
Step 4:
Serve up with your favourite chips, tacos or fajitas.
