Add a little colour to your diet with our fresh, zesty charred tomato salsa from chef Jamie Humby.

This salsa is a versatile topping and combines perfectly with homemade tacos, fajitas, salads and (of course) corn chips. With charred veggies and bold, tangy flavour, this roasted tomato salsa is a delicious addition for your next meal.

  • 4 ripe tomatoes, whole
  • 1 white onion, skin on, quartered
  • 4 garlic cloves, skin on
  • 1 large red chilli, skin pierced
  • 1 handful coriander stalks and leaves, chopped
  • 2 limes, juiced
  • 1 tbsp olive oil
  • Cracked black pepper

Method

Step 1:

Pre-heat a BBQ or heavy-based pot on high.

Step 2:

Add garlic, quartered onion, chilli and tomatoes, and dry roast until nicely charred.

Step 3:

Remove skin from onion and garlic, and add to a food processor with the tomatoes, chilli, coriander stalks, lime juice, olive oil and pepper. Lightly pulse until the vegetables appear diced.

Step 4:

Serve up with your favourite chips, tacos or fajitas.
