  • 1/4 BBQ chicken, shredded
  • 1 wholemeal bun
  • 1/2 tsp raw sugar
  • 1 tbsp rice wine vinegar
  • 1 tbsp Hoisin sauce
  • 1/2 carrot, peeled and grated
  • 1 baby cucumber, sliced
  • 1 small red chili, sliced
  • 1 tbsp coriander, leaves picked

Method

Step 1:

Grate carrot, then add sugar and vinegar, mix and set aside.

Step 2:

Shred chicken from bone and set aside.

Step 3:

Spread Hoisin sauce on bottom side of bread, then add carrot (squeeze excess liquid off first) and cucumber as your base.

Step 4:

Layer in chicken, then top with coriander and chilli.
