Try a healthier take on fried chicken tenders with our oven-baked crispy chicken strips coated in honey and quinoa flakes.

We all crave a bit of fast food from time to time, but that doesn’t mean we enjoy the feeling of greasy food sitting in our stomachs for days. Replace the deep fryer with an oven or air fryer, and switch out heavy bread and flour coatings with honey, quinoa and Italian herbs. This is a seriously simple recipe you can customise with your preferred herbs and spices (maybe add a little kick with some chilli or paprika, or add garlic flakes and soy sauce), and is a great addition to a garden salad or wholegrain wrap with veggies.

  • 200g chicken breast
  • 3/4 cup quinoa flakes
  • 2 tbsp dried Italian herbs
  • 1/4 cup honey
  • Extra virgin olive oil

Method

Step 1:

Pre-heat your oven to 190°C and line a tray with baking paper.

Step 2:

Combine the quinoa flakes and dried herbs in a bowl to make your coating. In a separate bowl, pour in the honey.

Step 3:

Cut the chicken into 5cm strips.

Step 4:

Dip each chicken strip into the honey, then roll in the quinoa flake mixture and place on the baking tray. Repeat the process until all strips are coated.

Step 5:

Brush the chicken with a little olive oil and bake for 10 minutes.

Step 6:

Turn the oven to its grill function and grill the strips for 2 minutes on each side or until crispy.

Step 7:

Serve in a wholegrain wrap with veggies or alongside a garden salad.
